Birthday Dinner

I ate dinner at work so that we wouldn't have to do any cooking or cleaning.  I had a veggie burger with cheese, lettuce, onion, and tomato.  A few French fries, a tomato and basil grilled cheese sandwich, some hominy casserole, and some squash.  Yum!  It was way too much food though.


Back home, my friends surprised me with some cake.  I had a piece, which was tasty, but again, I had way too much to eat.

Stayin' Awake

I had a long class yesterday afternoon, so I brought some caffeine to help keep me awake.



Birthday Lunch

Yesterday was my birthday.  I ate way too much at both lunch and dinner.  Oh well.  One day a year is not a huge deal.


At the top left is a butternut squash soup.  I thought it was alright, but apparently later batches were too salty.  The main plate has a bunch of curry, but it was just OK, I don't even think I ate it all.


They had some tomato and mushroom pizza, so I had two small pieces of that.


I also had some of the Brussels sprouts.


And a piece of chocolate cake, since it was my birthday.

Roasted Potatoes And Vegetarian Sausage

Dinner on Wednesday night was some rosemary roasted potatoes:


And some vegetarian Italian sausages from Trader Joe's. I fried them up with some onions.


Basically a big excuse to eat a lot of ketchup.


I also had some honeydew bubble tea.

Still Hungry

I was told that the secret to feeling full was a bunch of fiber and a little fat.  So, I added a little fat in the form of some cashews, peanuts, and almonds.



Big Salad, The Third

Wednesday I had another big salad.  This time, I added a tiny bit of lowfat cottage cheese.



Another Fabulous Lunch

Really digging the cafe lately.  We have some "Scallops Verde with Smoked Tomato Wheatberries and Spelt" which were delicious and spicy (and the wheatberries were great too).  A papaya and sugar snap pea salad with sesame seeds and mirin (got it because it sounded strange, but it was great).  A stuffed portobello mushroom with squash (and a bunch of other veggies).  There's also a small salad with spinach, fresh mozzarella, and tomatoes.  Finally, the small plate has a polenta cake with succotash! I've never had succotash before, but it was really tasty.


As if that weren't enough, I had a small slice of pecan pie.


Tofu Skillet

We have a recipe for a tofu skillet that is pretty good.  It has peppers and onions and squash and tofu, and melted muenster cheese over the top.  Kendra made it and it was tasty, although the tofu was probably a little past its prime.


Yet Another Big Salad

This is becoming a bit of a tradition for better or worse, but in the late afternoon I had another big salad.


Delicious And Varied Lunch

On Tuesday, I had a pretty darn good lunch.  This is fettuccine in peanut sauce, a mushroom risotto, cayenne shrimp, and a chayote and butternut squash medley.  Delicious!


I also had a small banana and cherry milkshake.

Leftovers

I had two servings of the leftover pasta, since Kendra didn't like it.




I also had a few more of those mint chocolate UFOs from Trader Joe's.

Hunger-Busting Salad

Got hungry around 3:30.  Had a big salad.



Wannabe Healthy Mexican Lunch

I got in one of the lines at work today hoping for vegetarian mole, but it had pork fat in it. Oh well.  I grabbed a few corn tortillas, some pinto beans, some sauteed portobello mushrooms and onions, some guacamole, tomatoes, lettuce, onion, and sour cream.  I mixed it all up and ate it with the tortillas.


Then I had two small cookies for dessert.  Peanut butter and chocolate white chocolate chip.

First Smoothie From The FooBar

Morning weigh-in: 231.2!

I was running late today, so I grabbed a "Berry Bliss" smoothie from the FooBar at work.  It's just fruit and orange juice. Yum!



Pasta With Lemon Asparagus Cream Sauce

Sunday night, Kendra picked a recipe and we made it.  We started with just a simple salad of carrots, cucumbers, avocado, and tomato.



Next was the main course.  We started by peeling some asparagus, sauteing it with some garlic, then mixing in some cream and lemon zest (and a tiny bit of finger zest).  Then we mix it all in with some pasta.  The recipe called for fettuccine but we didn't have it, so it came out a little dry (since the ratio of surface area to volume is much higher for spaghetti).  Kendra didn't like it, but I thought it was great.  I topped it with some shredded Romano cheese.


No Lunch

Since I had such a late breakfast on Sunday, I skipped lunch and just had a snack of almonds and cashews at work.  Oh yeah, those are my shades. I'm so cool.



More Cereal

Sunday I had more cereal. Morning weigh-in was 233.2.



Easy Dinner

Kendra and I were too worn out to cook anything.  So we just had some leftover enchiladas (we each had half).




Then we had some Trader Joe's Chickenless Nuggets. I had mine with ketchup.




I also wanted a beer, so I had this "Hoptober" from New Belgium. It lived up to its name.




And a couple of those mint chocolate UFOs from Trader Joe's.



Picnic!

Kendra and I went to a picnic for the Puget Sound Birth Center.  There were, predictably, a ton of kids there.  I had a veggie cheeseburger, with lots of fixin's.


Some butter mochi, cornbread, and one of Kendra's chocolate chip cookies.


The cookies went fast, so I went back for more buttered mochi, which was delicious!

Mostly Bran Flakes

Just a little bit of raisin bran on the top here on Saturday.  And I don't remember what the morning weigh-in was.

Enchilada Leftovers

Dinner last night was leftover enchiladas! Yum! Easy and tasty. I just had two.


Kendra baked cookies for a picnic we went to today, and she saved one for each of us for dessert.

TGIF Snacks

At TGIF this week I had a couple of small snacks.  First, a vegan veggie wrap.

And second, a Pyramid "Haywire" Hefeweizen, which was just OK.

The Usual Snack

Small bowl of mostly almonds and a few cashews.



Lunch As The First Meal Of The Day

Morning weigh-in on Friday was 234.4 pounds.  I seem to be fluctuating a lot.  I also wound up skipping breakfast.  Lunch at work was a crab cake and fake crab (tofu) cake with remoulade, a strange nori and potato roll with sweet chili soy sauce, one cheese-stuffed manicotti, and a miniature elephant ear (very miniature).


The crab cakes were not really to my liking, so I went back for a big salad with spinach, lettuce, tomatoes, broccoli, mushrooms, tofu, garbanzo beans, onion, avocado, and honey sesame ginger dressing.


They had a cake shaped like a milkshake, so I had to have a little of that.

Veggie Enchiladas

Kendra chopped everything and made the filling, so when I got home on Thursday, I just did all the wrapping with tortillas, covering with sauce, and sprinkling with cheese (and, I guess, baking).  Yummy veggie enchiladas! This is one of the dishes that made us converts on zucchini.


I started with two.


Then went back for one more.


For dessert, I had a couple of these candies we got from Trader Joe's.  They were pretty good, albeit a little bitter for my taste.

Snacking

I got this oddly deformed Coke Zero can along with my usual mix of almonds, honey-roasted peanuts, and cashews.  It was difficult to open it, and I had to pour into a glass, but I figured no one else would take it and I didn't want it getting thrown away.
