Birthday Dinner

I ate dinner at work so that we wouldn't have to do any cooking or cleaning.  I had a veggie burger with cheese, lettuce, onion, and tomato.  A few French fries, a tomato and basil grilled cheese sandwich, some hominy casserole, and some squash.  Yum!  It was way too much food though.


Back home, my friends surprised me with some cake.  I had a piece, which was tasty, but again, I had way too much to eat.

Birthday Lunch

Yesterday was my birthday.  I ate way too much at both lunch and dinner.  Oh well.  One day a year is not a huge deal.


At the top left is a butternut squash soup.  I thought it was alright, but apparently later batches were too salty.  The main plate has a bunch of curry, but it was just OK, I don't even think I ate it all.


They had some tomato and mushroom pizza, so I had two small pieces of that.


I also had some of the Brussels sprouts.


And a piece of chocolate cake, since it was my birthday.

Big Salad, The Third

Wednesday I had another big salad.  This time, I added a tiny bit of lowfat cottage cheese.



Another Fabulous Lunch

Really digging the cafe lately.  We have some "Scallops Verde with Smoked Tomato Wheatberries and Spelt" which were delicious and spicy (and the wheatberries were great too).  A papaya and sugar snap pea salad with sesame seeds and mirin (got it because it sounded strange, but it was great).  A stuffed portobello mushroom with squash (and a bunch of other veggies).  There's also a small salad with spinach, fresh mozzarella, and tomatoes.  Finally, the small plate has a polenta cake with succotash! I've never had succotash before, but it was really tasty.


As if that weren't enough, I had a small slice of pecan pie.


Yet Another Big Salad

This is becoming a bit of a tradition for better or worse, but in the late afternoon I had another big salad.

Hunger-Busting Salad

Got hungry around 3:30.  Had a big salad.



Wannabe Healthy Mexican Lunch

I got in one of the lines at work today hoping for vegetarian mole, but it had pork fat in it. Oh well.  I grabbed a few corn tortillas, some pinto beans, some sauteed portobello mushrooms and onions, some guacamole, tomatoes, lettuce, onion, and sour cream.  I mixed it all up and ate it with the tortillas.


Then I had two small cookies for dessert.  Peanut butter and chocolate white chocolate chip.

Pasta With Lemon Asparagus Cream Sauce

Sunday night, Kendra picked a recipe and we made it.  We started with just a simple salad of carrots, cucumbers, avocado, and tomato.



Next was the main course.  We started by peeling some asparagus, sauteing it with some garlic, then mixing in some cream and lemon zest (and a tiny bit of finger zest).  Then we mix it all in with some pasta.  The recipe called for fettuccine but we didn't have it, so it came out a little dry (since the ratio of surface area to volume is much higher for spaghetti).  Kendra didn't like it, but I thought it was great.  I topped it with some shredded Romano cheese.


Picnic!

Kendra and I went to a picnic for the Puget Sound Birth Center.  There were, predictably, a ton of kids there.  I had a veggie cheeseburger, with lots of fixin's.


Some butter mochi, cornbread, and one of Kendra's chocolate chip cookies.


The cookies went fast, so I went back for more buttered mochi, which was delicious!

Lunch As The First Meal Of The Day

Morning weigh-in on Friday was 234.4 pounds.  I seem to be fluctuating a lot.  I also wound up skipping breakfast.  Lunch at work was a crab cake and fake crab (tofu) cake with remoulade, a strange nori and potato roll with sweet chili soy sauce, one cheese-stuffed manicotti, and a miniature elephant ear (very miniature).


The crab cakes were not really to my liking, so I went back for a big salad with spinach, lettuce, tomatoes, broccoli, mushrooms, tofu, garbanzo beans, onion, avocado, and honey sesame ginger dressing.


They had a cake shaped like a milkshake, so I had to have a little of that.

Veggie Enchiladas

Kendra chopped everything and made the filling, so when I got home on Thursday, I just did all the wrapping with tortillas, covering with sauce, and sprinkling with cheese (and, I guess, baking).  Yummy veggie enchiladas! This is one of the dishes that made us converts on zucchini.


I started with two.


Then went back for one more.


For dessert, I had a couple of these candies we got from Trader Joe's.  They were pretty good, albeit a little bitter for my taste.

Leftover Lunch

I worked from home today because I wasn't feeling so well.  So for lunch, I just had some leftovers from last night.  A little bit of pasta with sundried tomato alfredo sauce.


And some tofu provençal. Yum!

Fancy-Ish Dinner At Game Night

Dinner tonight was at our friends' house for game night.  We made some fettuccine with sun-dried tomato alfredo sauce.


Kendra also whipped up an excellent batch of Tofu Provençal, which is so easy to make and so delicious and healthy.  It has tofu, green beans, tomatoes, onion, and garlic.


Our hosts prepared some delicious bruschetta.


And they also provided some delicious pear cider.


One of the other guests brought a home-baked lattice-top blackberry pie.


Which went nicely with a little ice cream.


While playing games later, we had some of this delicious chocolate.


And even more cider, this time, apple.


What a great evening!

Cheese-Filled Lunch And A Sundae

For lunch today, I had the broccoli and cheese soup, a little bit of fancy macaroni and cheese, and a big salad with lettuce, tomato, broccoli, onion, garbanzo beans, mushrooms, corn, and a sesame ginger dressing.



I felt it was light enough that I could have a very small sundae. This is peach cobbler ice cream with real caramel and some bananas.


Leftovers

Dinner on Monday was leftover tofu tikka masala.


Still hungry, I had the rest of the leftover rice with some hoisin sauce.


For dessert, I had the last of the tapioca pudding, heated up, with some cinnamon.

Tofu Tikka Masala

For dinner on Sunday, we made some tofu tikka masala with the sauce from Costco.  We started, though, with a random salad: tomatoes, avocado, carrots, and cucumber.  It was actually pretty good!


Then the main course, over some rice. It's tofu with peppers, tomato, and onions.


I had a Hornsby's crisp apple cider.


And I opened this pineapple marzipan dessert, but it was so old that it didn't taste good, so I only had one piece.

Leftover Fajitas And Tapioca Pudding

Dinner last night for me was just the last of the leftover mushroom fajitas. I just put on a little cheese, some of the rice I had leftover from lunch, some lettuce, tomato, and chowed down.


Dessert was the tapioca pudding! It was really more like a custard, but I liked it! It was really rich, so I only had about half of this and gave the rest to Kendra.

The Sampler

Lunch at work on Friday was a sampling of a bunch of different things that sounded good to me. On my plate are: a vegan tofu and vegetable skewer, some flatbread, some eggplant korma (just above the flatbread), some curried potatoes, and some grilled asparagus. In the bowl is some potato and goat cheese soup. Yum!


Even after all of that (which wasn't really all that much), I was still a little hungry. Instead of hitting up something super caloric, I decided for a bunch of veggies, after learning that the salad bar now has sprouts. The dressing is some sort of Asian sesame something or other. But I've got lettuce, corn, tomatoes, onion, sprouts, and broccoli!

I still wanted something a little sweet, so I got a tiny piece of coffee cake, since it had some sort of filling that I hadn't seen before.

Fajitas Once More

We still had leftover fixin's for fajitas, so Kendra chopped everything up, and I cooked up another batch of mushroom fajitas.  This time I added a little bit of cayenne pepper to the mix to spice things up. I had just two fajitas since I had had so many snacks yesterday.


But I did eat one mini Reese's peanut butter cup, since I brought it home and Kendra didn't want it.
